Only a handful of grape varieties dominate red wine production, and Cabernet is one. It can deliver the flavor the world craves every day. While it is a noble grape, its wines can be quite different. This is all you need about the king among red grapes.

Who is your Daddy?

Around 840,000 acres of Cabernet Sauvignon are planted worldwide, making it the most widely cultivated red grape (for wine). Cab Sauv, however, is a relatively new grape. Some grapes are older than others.

In 1997 DNA testing proved that Cabernet resulted from two classic French grapes, Cabernet Franc (and Sauvignon Blanc). Likely, the crossing occurred several centuries ago. Vignerons quickly recognized the noble qualities of the young vine and the flavorful fruits.

Growing Cabernet

Cabernet vines bloom late in the season and are ready for harvest several weeks earlier than other varieties. This is good news for grape growers as it gives them insurance against frost damage that could occur in spring. The vine is very resistant to disease and seems to produce good fruit wherever it is planted.

The climate, soil type, and altitude can all affect the taste of Cabernet. Cabernet will display its structured, serious face if the weather is bad or the vintage is cloudy. Cabernet’s rich aromas of black fruits and alcohol warmth are best in warmer climates.

Flavor Profile

The grapes are thick and produce rich, concentrated wines with lots of tannins. This is exactly what you need for long-lasting wines. The nose is dominated by the aromas of cassis and black cherries. They blend well with oak aging aromas like tobacco leaves, baking spices and vanilla.

Grapes inherit a special trait from their parents: a tendency for green vegetable smells to be developed from a pyrazine molecular. Don’t be shocked if you find bell pepper aromas within your glass.
